So I have 2 big strip steaks vacuum sealed in the freezer.

I was thinking of just throwing them in the Jacuzzi and then seasoning for the sear after the sous vide is done.

Thoughts?

Should I take out of the current vacuum bag and throw some salt and pepper on them now or jus let it cook as is?

I've done it with great results. Just pat them dry, S&P, and burn a crust on it. It was every bit as good as pre-seasoning.

I do it all the time. I add 30 minutes to the cooking time. Works great.

I've done that but IMO the flavor is far superior if they've been seasoned before going into the bath. SP and some garlic powder is my choice. I've read that a pat of butter is also good to add but I have not tried it.

If it were me, I'd open the bags, season the frozen steaks, and rebag. I think it's worth the effort, but YMMV.

I've done it both ways and prefer the pre-seasoned method. However I don't think you be a bit disappointed either way.
