View Full Version : Cleaning out SF & Sriracha Slathered Chuckie

Primary goal today was to do a clean on my SF, but then we ran out to Costco and well................Costco happened :becky:. Showed pretty good restraint.

So excited to get the SF ready for an event in a few weeks. There a competition about 10mins away March 3&4, Sip & Swine (http://sipandswine.com/) (shameless plug) at the G-Braves stadium and benefits a local kids charity/shelter. Erin and I helped to vend and raise money last year (instead of competing) cooking along side with the shelter and it was so much fun :-D. Just giving the cooker a once over, scraping out the bottom and I'll give a quick pressure wash on the grates here in a bit. Hoping weather is awesome in a few weeks like last year. Going to try and do double the food we did since we sold out early :loco:.

Picked up a couple of chuckies on a whim and am cooking one today for some pulled beef for tacos. Vacuum sealed one and gave the other a sriracha slather and some spices. Then onto the egg. Probably let it ride 250'ish for 3hrs and then foil with broth, garlic & onions.

Supposed to be close to 70 today and a little overcast so it's just perfect out. Might get a light rain later, but nothing crazy. Happy Sunday!

The gunk in my shirley stays liquid. Glad to see you got that mess cleaned up. How many cooks did it take to get that much build up?

Sometimes the stuff in the bottom is more liquid than others. I don't know exactly how many cooks this was and I've done a few hose down the grates in the cooker while it cool and drained out of the ball valve. So the pick isn't a super accurate representation of build up. That maybe 5 cooks since I've done any cleaning at all.

Made guac. Love it chunky. The is less in the bowl now than in the last pic :-D. I hope the rest makes it to dinner........

Looks delicious! I have never seen bell pepper before in quac. Might have to try it

Accidental trick :-D. It is actually a poblano, but looks like bell pepper in that shot. I'll use those instead of jalapenos half the time. But bell pepper would add a nice crunchy layer in there for those that wouldn't want any heat, but a little extra fresh veggie in there.

This looks absolutely KILLER.

Need to get some green chilies over your way... Heck, even the premade sauce goes well in queso (give me a hollar... we'll work something out).


Guac looks frickin' (I hate this term, but...) "On point!"

Good lookin stuff there! Guac pretty much how I make it as well - nice and chunky! Gotta have Jalapenos or Serranos though. I should probably try a few other types of peppers as well, but never have for whatever reason. [shrug]

Ya I don't trust people that like smooth guac :becky:. I can eat more of a "creamy/smooth" guac if it is served to me, but I don't ever make it that way. I'll add different spices sometimes, but normally it is salt, pepper, cumin and cayenne.

Nice looking chuckies Jason! I had intended to cook some chickens on my SF today but my cleanout from the last cook took longer than anticipated, plus I had to finish painting the Q-Shed taking advantage of the 82deg day. Planning on cooking spares this upcoming weekend.
