I found a guy that will cut beef to order. Great guy at a small butcher/deli/liqour store/gas station about 12 miles from me.

This is the 2nd time I've had him cut tri-tip for me. I'm not convinced what cut of meat I'm actually getting.

Typically TriTip from Kroger is the typical trimmed pre-packaged deal.

Anyone have any insight into what I'm getting?

Im not sure from looking at the package. But 6.59lb is steep

That does not look like any TT I've ever seen. Wrong shape, wrong marbling, wrong thickness. Should look like this.

Looks like a round to me, what beef jerry is made with. That's about a right price for it.

No way. I make jerky with eye round in large quanitys and all my local grocery stores in the east coast on sale for under $3/lb. And they go on sale atleast two times a month.

:shocked: I think it was close to that the last time I bought one. Sure not $3 though. I do live in nowhereville though. It boils down to supply and demand here.

Beef prices are not cheap in PA either. But $6 is alot for eye round. Maybe i am spoiled with always buying better cuts when on sale, but to me eye of round is ONLY good for making jerky, and i would never pay more then $3/lb.

The Tri Tip I've bought locally before is right around this same price.

I just wasn't sure if it was an untrimmed chunk of Tri...

Possible it's eye of round....or a partial piece of that cut.....more likely it's a ball tip, cut that lies just north of the tri-tip.....every bit as good, just a little less marble/ fat content.......
I inject w/ creole butter or the like & they come out great !!!

The plan is to cook it just like a TT.

The last one of these slightly resembled a Tri Tip, so I didn't question it too much.

Thanks for the education! Anyone have a link to a cut chart? Like with the cut numbers so I can ask the guy next time I go in?
