It was time for another Bass & BBQ (we even let a couple of guitar players come) so I fired up the 270 Sumo then bought her up to temp. I did the Tri Tip on the PBC.

Ribs, Tri Tip and a Fatty. I used John Henry Pecan on the Ribs and Montreal Steak Seasoning on the Tri-Tip. Used Applewood for smoke with the Ribs and Fatty and used Hickory and Pecan for the tri tip.

Awesome. How did you like the ribs ? Never cooked them at that temp.

I cook hot n fast all the time. The Ribs were really good with just enough pull to them. You've got to watch the 270 when cooking without water, it actually spiked today and I needed to add some water to kick it back some and the closed the intake a little more and it was fine after that.

Great looking Grub mate, What was the drink besides Pepsi.
Your Tri Tip looks to have a bit of a crust on it.
Very Tasty looking.
Montreal Steak seasoning? I can get that here
