View Full Version : Full Spare + Chicken on Vertical offset with new upgrades! Live cook

Good morning folks! Thought it was finally time to upgrade my vertical offset a bit. First I bought new wheels, rated for 1000lb/each. I had problems with the pneumatic tires where the weight of the smoker when the swivel casters would spin, They would catch in the middle and it eventually just warped the wheels.

Rolls around like a dream now! Full 360's no problems with the swivels spinning.

The 2nd upgrade is in a rough sketch right now! But I now have tuning plates! Couldn't mess with making it look all pretty as I wanted to cook with them. I got them adjusted where all temps side to side on the middle rack was right for my ribs! Moved temp gauges down to the grate my chicken will go on later, they were pretty off. So I have been adjusting them all day. But this will work great!

I will make it look pretty later on. Not necessary right now! If your wondering why there's a bunch of ash on the bottom of the smoker. It's because we laid it down on the back to replace the wheels. Trust me it wasn't easy but I forgot to clean out the fire box LOL

Here's the ribs! Used Weber Dry smoking rub on the ribs. Its pretty good for a rub. I ran out seasoning this rack of ribs. Not sure whats going on the chicken now! Probably just SPOG.

Update: I learned I probably should have started checking temps with the bottom grate and adjusted tuning plates then went up from there. I can't check all 3 grates at the same time as I only have two oven thermometers. Bottom grate is now even Will check rib rack again. Hopefully I've got this thing dialed in!

Well 2 hours into the cook, Temps have been pretty even all day as far as I can tell. A lot better than without the tuning plates. Decided I might need to cut a 2" wide plate to fill the bigger gap. As I have a larger opening on the left side of the cooker and The higher the grates the bigger temp difference from left and right there is. It's only a difference of 15-20 degree's though on the top grate. Better than 75-100 degree difference!

Ribs are looking fantastic. Beautiful color. I must have really even temps front to back as well! Normally hot spots are in the back of the cooker. I've got even color all around on the ribs! Been cooking at 275-300 at this point I needed to add wood to my fire. I don't have foil so I'm not wrapping these. Not sure how long to expect them to cook. I assume 4 hrs at 275-300.

Toothpick goes through like butter. 4 hours after cooking 275-300. They look beautiful! The tuning plates totally changes the way my cooker cooks. I had a lot of air flow towards the back and front. Its mostly even cooking all the way around now!

Update: To a lot of people here these are perfectly cooked ribs. But for my taste I could of let them go for 4 1/2 hrs maybe. I like it to be on the verge of falling off the bone.

Makes the 3rd person to ask me that! Not sure why but I find it kinda funny :) But no, there was no sauce, no glaze on the ribs. That's how they came from the cooker. Nice and juicy! No spritzing, no mops. nothing. Also no wrapping for the 4 hr cook time. I really wish I cooked them a tad longer but they are great!

Ribs have a nice shimmer to them that's why I asked, I usually cook them dry without wraping, great job and the bird looks good too.

It was a pretty interesting cook. I normally only get that Shimmer/juiciness if I wrap ribs. I was surprised at the out come not wrapping. Normally I end up drying ribs out a bit without wrapping. I would have wrapped them but when it came time to I realized I was out of foil LOL.

If today was any indication on how my cooker will run for most cooks, I'll never wrap a rack of ribs again. Think I might attempt a brisket with no wrapping soon :) I normally have to wrap brisket too because they get to dark.

I sure do! A buddy of mine built the smoker for me. This was taken the day the build was finished. Regret buying those pneumatic wheels now LOL. With my new wheels alone I'm ready to cook as much as I can. It was hard to move before replacing the wheels.

I've got a full build thread on it as well. With the pneumatic wheels it was slightly to tall for me. It was hard for me to reach the top shelf of my cooker. Putting the new 6"x2" wheels on really shortened the cooker to where its perfect. Also with the Pneumatic wheels there was just to much flex where the cooker was never really stable.

Thanks guys! Looking forward to my next cook. Dealing with some crappy weather other than today would be a nice day to cook!

Next cook is gonna be Pepper stout beef. I've got a craving for it after I seen someone else on here make a PSB Pizza.
