Weather was good, and the wind died down yesterday, so I decided to fire up the kettle for some eats.

Got a rack of spares, trimmed them up, and threw some Lambert's on them. First time using Lambert's on ribs for me.

I also decided to dry bring a couple of NY Strips as well. Dry brined in fridge for about 3 hours, and then cooked with a reverse sear.

Everything came out fantastic. I've only had my kettle about a month, so I'm still dialing it in, but so far, I've been extremely happy with it. I see a lot of cooks on it, in the near future.

until I found this forum I never realized a kettle could turn out good BBQ like that. Nice job on both.

Nice work, looks good! Mastering the kettle has really set a foundation of producing good BBQ and cooking for me.
