View Full Version : Hanging a Butt in the WSM

Just under 9 pounds before trimming, trimmed aggressively because I plan on panning it after 3 to 3.5hrs into the cook. Seasoned with Swamp Boys Rub cooking directly over coals and added 4 chunks of Cherry for smoke. Had a small Pork Belly and threw it in there too

This is my first time hanging a Butt just wanted to try something different.

WSM temp was 307 when they were hung.

Pulled the Pork Belly at 3 hours (forgot to take a pic - doh) and pulled the Butt to pan at just under 3.5hrs, IT was 170, plan on checking it for probe tenderness in 60 minutes. WSM temps have been steady at 309-311.

Just before being panned and covered with foil.

Probed like butter at just over 5.5hrs, bone has a nice wiggle to it and going to let it rest for an hour before chopping.

Little darker than I was hoping for should have panned it at 3hrs in to the cook.

I love hanging stuff in my WSMs, although have never done a butt.
Looks like spectacular results. Do you have any pix of them shredded?

Looks like spectacular results. Do you have any pix of them shredded?I like to chop instead of pull seems not to get as mushy chopping.

What is the hanging set up you have there. Does it fold down do you can close the lid? Keith

What is the hanging set up you have there. Does it fold down do you can close the lid? KeithIt is the Weber Hanging Kit and when it is installed in the WSM it does not fold, it does fold up for storage. When installed it doesn't interfere with the lid and I have a lid hinge installed and can open and close the lid without any problems. The Weber kit comes with fish hooks so I ordered so hooks from Pit Barrel Cookers.

Would that be the standard hanging kits that come with the thin hooks (for fish I think)? You add the hooks aftermarket, correct? Thanks.

Man that looks good! Help a noob out, what are the benefits to hanging over putting on a rack? Is it just to be able to use bigger chunks of meat in the WSM?

Yes you are correct, ordered the hooks from PBC

The real advantage is when cooking Ribs I can easily hang 6 racks in my 18.5 with no problems, I really like hanging Chicken halves and Pork Loins directly over the coals other than that it's just a different way to cook, it's fun to be able to change things up from time to time imo.
