Gonna make up a batch of chili today. Was at RD last week and picked up a large pack of Tri Tips. Anyone use them for chili? Not sure if I should try one or stick with chuck. Or a combination of the two.

Thoughts?

I wouldn't ruin a tri-tip like that... :-P

It would have to be way overcooked to make it right for chili.
I'd stick with a chuck roast.

Yeah, that was my initial thought, but I figured I'd ask.

Try cooking the tri tip like a brisket, and it should be fine. Cook it unwrapped to 160 degrees, foil it, and cook it to 200. If you pull it and rest it as is in the foil, then you should also have about a cup of liquid that you can add to the chili for flavor.

This ... would make awesome meat and some great beef broth for the chili IMHO.

If you are going to slice the tri-tip would cooking it as described above be beneficial or just do it to 135 or so IT and slice? I've got one to try.

The Chili I liked best at a Chili competition in Vegas used Tri tip. No clue on how he cooked it, but it was delicious.

You might also consider using beef ribs.

We use leftover tt for chili all the time...love it. It's just 3 of us so when we get those 2packs from costco it works great.

Why not? Most chili recipes call for chunks of lean beef.

otoh - I love my TT so much... dunno if I could do that.

Leftover tri-tip is perfect. Wait, what am I saying there is no such thing as leftover tri-tip.

I couldn't bring myself to do that to tri tip. Used a chuck roast for the chili.
