View Full Version : My second smoke- pork spare ribs 18.5 wsm

Hey guys. So after I posted my first smoking experience, and after all the positive comments, I decided I was gonna make another brisket for dinner today, even though I said only for special occasions. I wanted to start a little earlier than last time so I started at 5 but when I went to open the bag, it smelled really bad so I just went back to sleep and when I woke up, went to Costco to return the brisket. I left with pork spare ribs.
Dinner will be late today and that's ok.
I will be smoking at 275f with pecan and hickory.
I used the same rub as shown in one of Franklins videos on YouTube. 2:1 Pepper & salt, paprika, gran. garlic, gran. onion, and chili powder.

Having a problem keeping the temps up. It's sitting at 255-260. Should I dump some of the water out of the pan or just be patient and let it ride.

The hotter you want to go the more of a battle you're fighting against the water. Don't worry too much about 50 degrees, they'll either be done a little sooner or a little later.

2 hours in
Spritzed some apple juice and then added some sauce ( mixture of water and BBQ sauce)
Gonna wait 15-20 min for the sauce to set, then wrap in heavy duty foil and let that go for another 2 hours. Following the way Franklin did his ribs.

Yes, these are Texas style ribs. Look at Franklin's video. With salt and pepper that'll take on a brisket looking crust.

Use some Cherry wood and that will help give a more mahogany color. Also more paprika in the rub.

Ribs are almost done. 30 more min, then 30 min rest. Smells great! :)

We just finished devouring the ribs. Came out amazing. Will be doing these more often since it only took 5 hours :)

Those are beauties! I have spares going right now. Personally I find the amount of paprika/chili powder and sugar in the rub make a difference in terms of color.
