View Full Version : just butchered this cow-how long should I age?

OK so I actually helped my cousin butcher a cow. We slaughtered it on Monday and cut it up last night so it only hung for two days. He is a hamburger guy and doesn't really care about tenderness. I was able to sneak a brisket and a plate of short ribs but don't know how to age them properly. I threw them in the freezer for now but should I refrigerate them for awhile or something?

they used to age beef sides 14 to 21 days in a cooler before cutting.

It's froze now.... Ribs and a brisket.... I wouldn't worry about aging it. They will be fine
