View Full Version : Off Work So Why Not Cook A Brisket

My plant I work for shuts down every year from Christmas to New Years and went to my Sam's Club and they had 13 pound Choice packer briskets on sale for $24 and could not resist . Pulled the Shirley smoker out today for the cook since I have not used it in a few months due to my new Assassin getting all the attention . Got it all fired up and going to cook with Pecan and Cherry and rubbed the brisket down with Kosmo's Rub and Slap Yo Daddy Hot Rub to give it a little kick of heat .

they must of been overstocked after Christmas and I regret not buying a couple of them and freezing them now .

there is not a real big difference but I think the Shirley has a better cleaner smoke profile than the Assassin if that makes sense .

nice deal on the brisket. i need to get my shirley fired up if the weather stays in the 80's this weekend. haven't fired it since the bash in November.

yeah I have been seeing too many pics with mold in their smoker so I am going to try and fire mine up every two weeks , never had mold but do not want it either .

Okay, now I'm motivated! Tomorrow I'm pulling an Angus packer and some ribs from cold storage and firing up the cooker this weekend. Thanks for the pics QF and it looks delicious. :biggrin1:

brisket took 9 hours till it was probe tender and came out great and just wish I would of bought three or four at the price I paid but got my brisket fix and have left overs for a few days .

That is exactly what I do with my leftover Brisket. The smoke ring was impressive and looked like a successful cook. Nice! :rockon:

thanks for all compliments , I just glad I found my way cooking them and coming out tough . using the probe tender method and not going by internal temp is my best friend now .:mrgreen:
