View Full Version : Just Cooked Porterhouse on BGE, Heavy Pron

I only get to eat red meat about once per month and today's the day! I scored Heavy in the freezer with a dry aged T-bone for me and the wife's dinner.

I lit the Royal Oak Lump and let it get blazing before the cook. The steak was seasoned with Montreal steak seasoning about an hour before cooking.

I closed the Egg dome and let the temperature max out before the cook and it hit around 700F. I normally cook a steak at 600F but wanted to see how 700F would work out.

I attempted to make cross sear marks but it didn't materialize for some reason and yes I had my cast iron grate low in the Egg.

The cook process included 1 minute and then another 1minute at 90 degrees on same side to make sear cross marks; repeat process on the opposite side; then 1.5 minutes on each side. Also, plenty of "burping" the Egg before opening.

As mentioned, the cross sear marks were a bust but the steak was cooked to my expectations and thanks to the cow the flavor profile was off the charts.

Looks perfect Check out the grill grates They cut down on flare ups and make awesome sear marks I do all steaks on my Egg with them
