I prefer 60/40 by weight... Course black pepper 50%, mix of hot pepper blend 10% and 40% kosher salt.

It's whatever you want it to be :becky:. It's a free county. I just eyeball it when I do salt and pepper. Those that can definitely for their life tell the difference are few and far between, the rest just repeat "50/50 by weight" :loco:.

Get crazy and add a little cayenne dust as the under coat before you s&p that sucker.

I watched a show on PBS here in Austin called DayTripper about Taylor,Tx and Louie Mueller does a 9:1 ratio Pepper to Salt . Not sure if he uses weight or volume but they are legendary in the parts.

I season my brisket one item at a time.

A Light coat of black ops
A medium coat of salt
A heavy coat of coarse pepper

I just do by dry measure 1/4 kosher salt and 3/4 coarse pepper and used to do the 50 / 50 but it made the brisket way to salty .
