Wide awake at noon, an E Plurabus Unum smoothie and a long walk on a cool windy winter day. Que the Mamas and Papas. Bride hit the mall while I headed north. She's cooking tonight. Salmon and spaghetti squash.
So I'm thirsty for a cup of coffee ☕️ still somewhat wind blown and chilled. That's when I see it. Something I've never seen before. I ponder and ask "what is that by the egg in your salmon mix". She replied, "50/50 coarse deli and Dijon mustard". I asked how long she'd been using that combo in the salmon patties. She replied 10-15 years maybe longer. I knew hers tasted better, I just didn't know why.

I never knew.

I guess her's taste what I guess a salmon burger would taste like. Top with a fried green chile, fresh tomato,Swiss cheese and a beet green leaf. Colorful and tasty. Maybe a tad of chipotle mayo.

Love salmon patties. I use to think they were awful cause the smell that filled my grandmother's when she fried them.

There's thing that my wife makes that I try to replicate but can't. I just leave those things to her.
