View Full Version : Last meal before heading to rehab... bacon jam

As if I needed another addiction, last week I made a small trial batch of BACON JAM based loosely on this recipe:

http://www.food.com/recipe/bacon-jam-463068

It turned out so great, today I jumped in the deep end head first with eight pounds of bacon for batch 2.0!

First off, the players for today's project:

Next off, a visit from a hopeful taste tester:

https://imagizer.imageshack.us/v2/461x346q90/r/924/Nhf543.jpg

The resulting rejected and dejected outcome:

https://imagizer.imageshack.us/v2/461x346q90/r/922/vcahm0.jpg

I didn't get any shots of frying the diced bacon or sweating the onions/garlic but I'm sure you can picture it yourself. Once that was all said and done though, everyone goes into the DO to simmer (pay no attention to the overripe bananas I didn't notice until after I posted the pic :tsk:):

And here we are a number of hours later:

Once it cools, I'll jar it up for Christmas presents and then head out to the Betty Ford Clinic for another stint. Hope to be out in time for the holidays! :loco:

Hope everything goes well at rehab, Mongo.

I'll PM you my address so you can send me some of that bacon jam for my holiday present.

Thanks for all the kind words my brethren... I'll try to stay strong. :thumb:

BTW, do you think they would confiscate the black banana peels if I smuggle them in and smoke them in my room? :decision:

Might have to give this a go but overall with commercial "bacon xxxx" have been disappointed. Homemade is probably the ticket. Thanks for sharing!

Not if you scrape the inside of the peels, then set it out to dry. You can take the dried powder and put it in some kind of inconspicuous container, and no one will be the wiser.

Of course, you will need a pipe to smoke it in, so that could be a bit of a problem...I'm thinking you can sidestep this whole thing and pick up a couple dozen packs of Mucinex DM, and you should be good to go! :loco:

You may want to pack an orange or grapefruit. Don't know why but my friend really goes on a fruit binge when he goes away for a while.

Interesting 16Adams... Thanks and I'll keep that in mind. I was thinking an apple is easy to carve into useful devices, but a citrus would give it a refreshing aftertaste.

So, were two over-ripe bananas enough or would you recommend the next time?

Two? Are you kidding? The poor guy is going into rehab, for Chrissakes. :mmph:

Mongo needs all the blackened banana peels he can get his hand on, and fast.

This is why I suggested the Mucinex solution...

Tough call Gore... too early to tell. From what they are telling me bacon jam can be quite the monkey on your back so I'm thinking I should have smuggled the frog in too. The good news is I'm rooming with CTE and he's offered to share some from his PB & nanner sammich stash. :whoo:

The Mrs. took the initiative to can it all up... I wonder if she'd be willing to smuggle a jar in. I don't think I'm going to be able to hack it.

Will Mrs. C be taking care of that cute dog or is that your service animal in rehab. With all the comments I couldn't figure out if you had a service dog, a service monkey or a service moose.... or if you're being serviced by a banana. :noidea:

Mrs. C is gladly taking care of the little white dog while I'm away. There was some serious debate over the whole dog/monkey/moose or banana service provider question, but in the end there was really only one viable option...

Nice catch QJ... very astute! Triple bonus foil points if you can identify the symbolism of that particular shade of black on said bananas. :loco:

I added the sriracha and chipotle to taste for some back end kick, plus balsamic for a little different companion to the apple cider vinegar.

Well I hadn't planned on it Titch, but if I do please don't tell Mrs. C.
