I am new to smoking, but was given a gas and electric smoker.I used the gas but it had crappy temp gauge and small with one rack. the gas to small and electric, was nicer but electric. so I modified them into 1. It had 1 rack now has 3. only problem is i used same burner. i placed hickory on lava rock above burner. yesterday I smoked 10# pork butt. good rub but not enough smoke flavor. yesterday was 43 degrees high wind. I smoked meat 9.5 hours was well done but smoke flavor was not great. Meat was moist, could not get temp above 200. ANY IDEAS?
