Never have a time issue or really need to ask for timing but if I want to feed people at 3 what time do I need to toss 2 butts on? Using my WSM 22 and run it for the sake of this 250-280.


I was thinking 3-4 am? That might give me a rest time also. What u guys think


Have rushing with people wanthing to eat

Don't know how big your butts are, but you should be good. You can bump your temp up and start later also.

2 butts total 18-19 lbs

What time should I fire smoker up to eat by 3pm

When I cook butts it usually takes about 8 hrs after about 5 hrs if the bark looks good and the fat cap on top is starting to split or crack I wrap for about 3 hrs let sit around 1 hr that usually works for me good luck with your cook

250 - 280 is quite a wide variance and each temperature will have drastically different cooking times.

My smoker's happy spot is at 250° (245 - 250)... Using this temperature...

I have the smoker ready at 11:00 pm and put the cold pork butts in. At about 7:00 am I pan the butt using an elevated rack to save the meat juices, and if need be I will tent with foil. Somewhere between 11:00 am and 12:00 noon the bone will wiggle like a loose tooth. At that point, the pork is done, remove from smoker and let it drop a couple degrees, then wrap tightly in foil and then wrap in old towels or a blanket and place in an insulated cooler until ready to serve at or about 3:00 PM...

If you prefer to cook at 280°, someone who cooks hot and fast can chime in and give you a timeline for cooking at that temperature.

I cooked a 9 pounder yesterday at 325° and it was done in a little over 5 hrs.

Just did 19.5 lbs (2) butts Thursday. Put on at 8am, 260 degrees, wrapped at noon, done at 4pm.
Put in Cambro to rest 1.5 hrs then pulled.

I'd bump the WSM up to 300° and put the butts on at 7:00am. Wrap when you get the color you want or foil pan and cover. They should be done (probe tender) by 1:00pm.
