Wife invited her parents over for dinner and they love prime rib. We have a couple roasts in the freezer sooooo, no brainer here. Also invited her sister who isn't a huge fan of steak. This was also one of the prime ribs my wife won at a meat raffle.

Seasoned the night before with salt

Got the joe jr at 250 (I prefer 200-225 but had a small cooking window since it was the weekday) with a chunk of oak.

Temp at 115, time to pull!

Rested it for about 30 minutes slightly tented then seared on the weber

served with grilled romain lettuce and hassleback potatoes. Had au jus and horseradish sauce.

Meat Raffle makes me think of our Local Pub on a Saturday Night... 5 Quid would get you a strip of tickets, and the prizes were tops (leg of lamb... top sirloin roast, etc)!

Delicious Prime Rib, brother. I grilled some really nice salmon on cedar tonight, and yet... here I am... drooling after a mean steak that you absolutely nailed.

Before, olive oil, salt, pepper. Grill briefly then grated parm and some lemon juice

Reminds me of how my dad those when I was a child. He did his in the oven with screaming heat for a few and then cutting the oven off and letting cook in the dying heat.....beautiful beautiful job dude!!

Lettuce is a vegetable. It gives it a more savory flavor when grilled. We like it.
