All the meat is off the drum now and resting in the cambro. The beans and mac and cheese are in the oven (couldn't fit it all in the drum). Coleslaw and veggie tray are in the fridge. Sauces all made. Getting my relax on till about 3:45pm

You weren't the only one that thought of that. I did it on purpose.

The cook turned out great. Have plenty of left over pulled pork for repurposing.

After the party and giving food away, we had about 5lbs of pork, one serving of slaw, and 4 servings of beans left. It was a good day with family and friends.

Sometimes simple is the best. Nothing to mistakes behind. Just simple, honest, good food.

I think the carrier pidgeon might of gotten caught in Hurricane Matthews winds when I sent it to you.

That slaw looks delicious.

Here is the recipe if you want to give it a try.
1/2 head of cabbage - shredded
1/2 medium red onion - sliced thin
2 handful of shredded carrots - could shred 2-3 carrots if you want. i was lazy!

1.5 tablespoons apple cider vinegar
1.5 teaspoons of tarragon
3 tablespoons agave nectar
2 tablespoons yellow mustard
1.5-2 cups mayo

Mix tarragon and apple cider vinegar and allow it to steep for 20mins.
mix in agave nectar and mustard to the ACV
Add 1 cup of Mayo and mix. Add more of the .5-1cup mayo left depending on your taste.

The slaw isn't super sweet or super mayo flavored. I normally don't like coleslaw because it is either too sweet or too rich/fatty, so I came up with my own slaw sauce. The mustard and acv cut through the sweetness and richness so it is a little bit lighter.

really nice all the way around. i keep staring at everything in the pans...perfection! :thumb:

Thanks!
