Now what do I do? Never smoked one before. What's the best way? Thought I might smoke at 275 or so until about IT of 125 or so then get the Joe up to 400 or so for a quick sear, then foil and rest for 15-20 minutes. Good plan or not?

Nothing wrong with that plan at all. I actually have one in the freezer I need to get out.

I just slap it on the grill, pull 125ish, slice thin. Treat it like a big steak.

I love to cook tri-tips. I grill to IT about 130 and let rest for about 10 minutes. I normally use a simple rub of salt, pepper, and garlic salt. Good luck on your cook.

Sounds like a good plan. I do mine a little differently though. I grill over indirect heat on my Weber Performer until about 125* and then sear over the coals on both sides to an IT of about 130* and let rest for 20 minutes. Carryover cooking will normally take it to about 135*. Have two prime TT's in the freezer that will be cooked in 2 weeks. Fabulous cut of meat. Serve with sides and some garlic bread that has been dipped in the juices from the TT and you will have quite a meal. Sides are normally asparagus and maybe potatoes or some salad. Good luck. Remember, with this cook your instant read thermometer is your best friend.

It all depends on how you want the final product to be. If you want it to be medium rare you may want to pull it at 113 IT and then sear on each side for 2 to 3 minutesper side. (I do 3 minutes)

Waiting for 125 you could only sear for 1 minute per side and still possibly be at medium.

My 2 cents.

It depends on what you are after.

More bark - Grill direct over med heat (375 or so), turn frequently until just short of desired final temp. (5 degrees or so, depending on thickness)

More consistent internal temp - reverse sear.

Use a chunk or two of Oak or Mesquite, or all hardwood if you can.

I never cook them low and slow. I handle them like a steak. I cooked them raised direct at about 400 on the medium big green egg until they are 130 IT. Family's favorite cut of meat.

On indirect, dome says 270, grate probe says 295. Cut up some Brussel sprouts with garlic butter and bacon bits.
