CATEGORY DESCRIPTION - READ BEFORE ENTERING

I've been thinking about Lamb as the next TD. It looks like it's been a year since we did one.


You may submit entries that are cooked from Friday 10/7/16 through the entry submission deadline of 12pm (NOON), Central US Time on Monday 10/24/16.

Entry pictures must be submitted by 12 p.m. (NOON) Central US Time on Monday 10/24/16

Hmm, I'm sure you all have seen whole hog/cow heads cooked up! I wonder how some lamb heads/cabezitas would fare in the TD? Think tongue, cheek meat, eyeballs and brain tacos! LOL! Ya never know. :grin:

Or maybe something like this, but using lamb! YUM!

I've had lamb birria quite a number of times - very tasty. LOVE that subterranean pit!

That big ole sausage looking thing he is using the caul fat and intestines for is called a Machito. The innards get chopped up and mixed with that pico mixture and wrapped up with the caul and intestines. Makes for a damn good taco along with some fresh pico or salsa.
