View Full Version : Chicken Satay with Coconut Lime Rice

I like to use boneless chicken thighs for this.

I cubed 2 lbs of thighs and skewered them. Then I seasoned well with Naturiffic Peppery Lime Salt and sprinkled some olive oil on them.

Then they went onto the Weber Performer that was loaded with a chimney of charcoal.

While the chicken was cooking, I made up the satay sauce in the cast iron skillet on the Cue-Grill.

Satay Sauce
1.5 cups Coconut Milk (1 can)
1/2 cup peanut butter
1 tsp Fish sauce
1 Tbs Tamari Soy Sauce
1.2 cup chicken broth

In the rice maker I put together a Coconut Lime Rice (Rice, coconut flakes, lime juice of one lime)

Drizzled some satay sauce over the chicken as it was finishing up.

Dang dog that looks great! Thanks to Buccaneer, I have been making more Indian food and really enjoying it. I'm cooking shrimp curry (from scratch) at Bart's shop at noon on Saturday...

That looks fantastic! I've been hitting the harvest brine, the sea salt and the hot salt - need to start digging into those other salts. Phubar left me some stuPh Phor making peanut sauce - looks like I can have a Brethren Bash on my plate!

No doubt that meal was probably devoured in a hurry. I will definitely try that recipe soon.
