Evening folks,
I smoked a couple racks of ribs today, having not done any for 2 years! I totally forgot how much fun BBQ is, I'm super glad I rediscovered it!
Rubbed, left in fridge for 2 hours then Cooked in WSM with Apple wood chunks) to 160f then wrapped in foil with rub, AJ, butter brown sugar and some NZ Manuka honey. Stayed in wrap for an hour. When the internal temp was about 75f they were liberated from the foil and brushed with modified Sweet Baby Rays sauce then put back on for about 15 mins.
I like them to fall of the bone but these were a little firmer, still coming cleanly off the bone when bitten.....
As you can see the ribs here in New Zealand are smaller and because our butchers cut up Hogs differently there's bugger all meat left on them.
I'd love to be able to buy ribs like I've seen on YT and TV shows.
