got a hold of these two bad boys today...

and never smoked any this meaty....Im thinking simple S&P rub, maybe 5-6 hours at 250.....

Ive cooked plenty of back ribs but not these ....

what would your method be?

That's the way I do them on the kettle indirect. I trim off as much fat as is convenient and do the toothpick test at around 5 hours.

I would just braise them in your favorite sauce for a couple hours. You really want a 3-4 bone plate if your going to smoke'em.

Don't trim those. Just rub em how you like, smoke at 250F. Cook until the meat wants to slide off the bone, about 5 hours. Rest 15 minutes and eat. No need to sit down.

I used to cook these all the time.
