Thanks everyone for the encouragement. My whole life I have been going after what I want. Even amonst the chaos or gigantic mountains we have to somehow climb. I will try to make it happen. My wife is so extremely supportive of me. That right there my brothers, is victory all in itself.

A 1000 us is about 1400 Australian at the moment, That would be cheap here

Currently a 3-bay sink and hand wash sink, a sandwich counter/cooler, work table, serving counters and storage..... It will take some time, but I will add a hood system, burners, etc.. Pics forthcoming:grin:

Playing around in the test kitchen tonight and the "chubbano" was born:-D. Succulent pulled pork, grilled smoked ham, zesty roasted pepper and provolone cheeses, grilled onions and sweet peppers, topped with "mutha" sauce all nestled in a freshly buttered and grilled crusty roll.

I've been looking at a trailer as my first option. This allows me to drop it on location and still be able to drive if I need. But I've also found that it would be the first step to planting in a more permanent location and build around it.

What I don't like is that I don't have enough cash yet to purchase one outright....yet. I didn't realize how expensive these are if new and how beat up some are used......

Pondering the next move, enjoying the beatiful morning that God hath made. This would be the day, that we took our first Grand at an IBCA competition. As I walked back from the stage, it's amazing the love people show for you and your food. Hmmmm, I wonder if I could convince the organizer to have the comp before the festival. That way we can reap the benefits after the awards ceremony, instead of the conclusion of the weekend.:grin:

I have as well but not for competition although the need is there. My eyes are usually larger than anything one me! LOL Got a quote for 166 large K I fell over backwards ... well almost.

I hear ya! I got a couple quotes for trucks that were over $200,000.!!!!:shocked:

Long day cooking at a road construction site. Man we were slammed! Ribs, tri-tip, beans, roasted corn succotash and so much more. It was awesome! I am exhausted, but ready to go again at a moments notice:) here are a few pics. I wish we had more photos, particularly during service. The sight of it all got me all excited.

There is a bypass road that it used at night to let traffic through. It is closed off during the day, so we setup tables and chairs on the road for dining.

We had an amazing time at the Downtown Throwdown this weekend. We were in a tight location or we could have definitely brought in another cooker to accomodate the awesome response of everyone. Sold out in 2 hours!

In addition, we cooked in the KCBS competition, finishing in the middle of the pack. It was a great time for sure! I loved seeing the lines out the window as we all hustled to help the guests and judges.

Decided to have a little fun wearing the chicken hat too:biggrin1:

Do you ever have those moments when you think you've got it all figured out, only to discover that your math was wrong? Ugh!

We had a great menu item planned out, tested it, tweaked it, tested it again, and then moved it into the trailer kitchen to do a full test. Well, all was going great until all of the heating elements on the new equipment decided to kick on all at once and blew the breaker. :sad: Back to the drawing board. Sigh...
