Quick note - somewhat incomplete.... [BRB - Doorbell] ... post as my next door neighbor (who apparently has a Kamado, and was smoking chicken breasts for dinner) pops by with his wife to welcome us to the neighborhood. :wink:

Trying to decide on a mid-range smoker as a stepping stone before I finally step up to the big leagues... but I couldn't take it any longer. NFL starts tonight and the family needs wings!

Bought a Weber 22" grill this morning... fired her up for the first time this evening.

I'm stupid... and forgot about building a pile of coals in the center with the wings around the outside. I made mine on one side, put a couple of chunks of hickory over it, and moved the wings (and the top exhaust port) around to get good coverage.

Momma hit the wings hard despite a back that's kept her off her feet for 2 days. It's amazing just how much I can NOT get done while playing Dad, Nurse, and family Ambulance Driver, etc.

Gratuitous cuteness shot of our munchkin tearing into a carrot while watching Carolina beat up on Denver. Yes, the Huggies box serves as the temporary coffee table.

I got a little wild and tossed the bird in a mixture of Kosher Salt, Black Pepper, Paprika, Garlic Powder, Onion Powder, and Ground Cayenne Pepper. Gave it about 30 minutes to marinate in the spices before I tossed it around in the bag again... then into the grill.

Hope that helps or provides some ideas.

Hard to beat the Weber 22" grill. I use mine all the time.

Appreciate the kind words and warm welcome back to the CONUS. Feels a little strange after about 7 years overseas. Trying to "fit in" again with suburbia.

So many of you have posted great cooks off just a standard Weber 22 that I couldn't pass it up any longer. It's been AGES since I cooked over charcoal like this, but my first cook produced flavors that I hadn't had over the LP gas grill and not in my LP gas smoker. I think I'm going to really enjoy this.

Looking into an OC Pecos (I know Smitty will be along shortly at mention of a Pecos) to feed my horizontal offset needs... and a 55 gal drum to turn into a 007 for other spinning and fun shenaniganry.

Now, back to the game as Carolina slowly collapses like a flan in a cupboard. :tsk:

Wings looking good. I love my kettle, easy to use and not much tending. I was wondering when I would see your next cook.
If I was back in the states I would order a OC. I like the grate level exhaust of the OC's.

Honestly, nothing like charcoal to make you feel at home. That's what my dad cooked on,and everytime I have burgers over charcoal it takes me back.

I just moved as well, but didn't have to wait for furniture from Japan. I moved about two miles down the road. I can't imagine that kind of ordeal. Welcome back.

Sure did! He popped his head over the fence when he saw me cooking wings and smelled the smoke. They brought over a piece of barbecue chicken for us to try (I reciprocated with a few wings). This guy's got some skills... it was GOOD.

Welcome back to the States, Shadow! The wings look like they came out good and I bet that 22" Weber kettle will see lots of use.

Check out the Char-Baskets when you have time. I use them in 95% of my kettle cooks. They make clean up and reusing unspent coals a breeze as well as using lump easier, since the smaller bits don't fall through the charcoal grate as readily.
