Got a few folks coming over on Saturday for the Labor Day weekend. Haven't done a pig head yet oddly and got one rolling tomorrow along with a prime brisket, some squirrels, rib tips and homemade sausage :clap2:. Probably going to start around 9am and eat a little after 6. Definitely looking forward to the pig head since I haven't done one yet.

Picked up the frozen pig head a couple days ago and it is about thawed today :becky:

Plan is to wake up sometime, go for a run, then fire up the Shirley and start cooking. Finally cooling off here and supposed to be mid 80's and cloudy which is perfect.

This is only my 3rd time having it. My neighbor gets them and I gut/skin them. It's cliche to say, but it tastes like chicken. If you pulled all the meat and gave it to someone they wouldn't know. Maybe some taste different, but there was no gamey flavor I detected.

Definitely will. Here's how it's looking after an hour. I'm running a little lower than normal in the 250-275 range to not scorch it and since I have plenty of time. I'll ride this temp for 4hrs or so and them probably wrap both up.

After stirring in the peppers with this spoon I licked that tiny part in the middle and while it wasn't "can't eat it" hot it definitely had more spice than most people would probably want :-D

Here it is after 3hrs. Looks pretty good. Going to wrap around 4hrs so it doesn't get too dark. I like how the ears are blowing up like a balloon :-D

How do you prep the pig head. Just curious. I bet the cheeks are awesome. I hear the head meat makes great tamales but I have never attempted to cook one. Thanks

This is my first one, but all I did was just put some seasoning on it and tossed into the smoker. I've done a cow head before and it was good. Interested in the cheeks, ears and brains.

So wrapped both meats a little after 4hrs. Pig head looks good, but what do I know :shock:. I stole a piece of the ear and it was crunchy and delicious. Cheek temp was mid 180's. Will let it go for a couple more hours I guess

Brisket is looking really nice. I haven't done a prime in a while. Stuck a probe in it and won't look again till at least 204. Pit temp is now 300'ish

It's actually been a while since I've cooked on my Shirley and the weather is perfect today, so couldn't be a better mix

The 3 squirrels are prepped. Will smoke for an hour in the warmer at a lower temp and then foil the pan and finish. Won't go on for a bit

Definitely will. Here's how it's looking after an hour. I'm running a little lower than normal in the 250-275 range to not scorch it and since I have plenty of time. I'll ride this temp for 4hrs or so and them probably wrap both up.

No brain :sad:. With the folks that came over I got side tracked and in the haste of late night slightly inebriated clean up, all the butcher paper I laid out got balled up and tossed........including the skull :doh:. I really enjoyed the cow brain when I cooked that so was bummed I didn't get at this one. But soon enough I will do one again.

Jason is correct. Tree rats (squirrels) taste awfully similar to chicken. I'm just glad to see I'm not the only one that eats them here....they are a natural fit for smoking as older squirrels (with tougher meat) are the best when cooked low and slow. You can chicken fry the younger ones with a sausage gravy.

I owe my marksmanship to squirrel hunting.

If someone tells you they're a good shot, you can easily find out- just give them a .22 and tell them to hit a running squirrel in the tree tops.

There's nothing you made that I wouldn't enjoy eating. I think you're right about the texture thing about eating eyes, I've eaten fish eyes all my life and now I gotta get me a pig head. I'll probably have to fight my youngest daughter, 10yo, for the eyes, she always wants to try everything. Great cook.

Ha ya. That was my wife who will eat most things including the cheek meat and squirrel, but some of the organ stuff gets her. She did try a small portion of the cow brains last time, but that super soft squishy (oyster type) texture she doesn't care for.
