LOL.. I might have to do some this weekend but roti style via the 007 and I'll do the white sauce on the ribs and some chicken. :heh:

I'm thinking that white sauce would be good on just about everything, even burgers or certain fish.

Never really considered moving to Oregon until now. :-D Food looks great. A camp like that around here would have the mosquitos and snakes carrying you off. Really nice post. Keep up the good work.

Great cooks! Every one of them! I especially like the pics of the tacos, the bacon and mushroom stuffing, and the plywood wind-guard you put up for your PBC. Nice work! Oh and the shot out your back deck of the river...so beautiful there!

I suspect that wind is the Achilles heel for the 007. Mighty windy where I am by Lake Michigan. Perpetually. So I figured I'd be testing different wind shields. Could attach a big collar to the drum. Could build a corner like Rogue did

Wind is an achilles heel for the 007...the wind can strip the heat out between the top of the drum and the cook grate. I came up with this wind break a while back and I know it's helped Cfarmer alot and Jim.

I don't have to use mine very often being in the city but when it's needed it sure works pretty good!

Very nice. I spent the first six years of my life in Medford, and my parents retired in Eagle Point. Spent a lot of time fishing on the Rogue and Lost Creek Revervoir.

I solved the wind problem the manliest way possible.

With duct tape and aluminum foil.

White sauce recipe ?? Looks great !!

Here it is.

Ingredients



2 cups mayonnaise
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons prepared horseradish
2 teaspoons ground black pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper



(Makes 4 cups)



Directions
In a large bowl, combine all the ingredients and blend well. Use as a marinade, baste, or dipping sauce. Store refrigerated in an airtight container for up to 2 weeks.

The apple juice sounds interesting...I'm partial to horseradish in white sauce, and I think those two flavors would go especially well together.

My recipe has the horseradish...it's a good one, I'll try to dig it up
