what are the best commercial smokers to use in a commercial kitchen. We will mainly smoke lots of chicken. It can be pellets or charcoal or wood.

I always thought I'd go JR Oyler or Burley. But, now I'm thinking FEC pellet cooker.

Old Hickory cookers are very popular as well, along with Southern Pride cookers if you want the set and forget gas assist.

Ole Hickory, Southern Pride are pretty much the standards most commercial kitchens I know of use wood and then switch to propane powered fire to cook their BBQ

I cook and eat my own BBQ but when I do not, I go to Southern Q here in the north Houston/Spring area. The owner uses an Ole Hickory. It's his expertise and recipes, etc but the cooker does seem to do a good job. His brisket is one of the best in the area.
