View Full Version : Pork Burnt Ends?

I've read about pork burnt ends, and I'm confused and a bit intrigued. How do you do it? Smoke a but til like 180, then chop in bite size pieces, put in tin foil pan, and finish? Or cube to start and cook the entire time that way?

Anyone done it? How to's? Pictures? Advice?

I make mine from CSR's.
cut meat into 1.5" cubes
coat with rub & skewer on bamboo leaving 1/2" between each chunk
smoke at 275 for 4 hrs or until the pieces have give when pinched between your fingers
remove the skewers & pan them add more rub and drizzle with sauce and cook until they are barked up.

I take a boneless butt and smoke it to around a 170 I.T. I pull it from the cooker, slice and cube it (around 1" cubes), sauce and rub the cubes in a pan, and put them back on the smoker for around 2 more hours....sampling along the way for doneness.

Pork candy! :-D

Ok, I'm doing this. I'll probably take a bone-in butt, cut it in half (so I have some pulled pork too), and then make the pork burnt ends out of the boneless half. I just happen to be doing rib tips (which will probably get added into beans) tomorrow, so I might as well do this too!

I did some pork burnt ends and they came out fantastic. Just like Smoking Piney said. I used a bone in butt,smoked till about 160. Pulled it of the cooker,cubed it up, sauce and rub. Into a foil pan and covered until tender. Give them a try. A real treat.
