View Full Version : Another rib cook on the PBC

Wanted to post pics of my Smithfield rib cook today. As mentioned in the PBC Appreciation Thread I was going to do a wrapped vs unwrapped cook as an experiment and report back the results. The parameters were laid out in my last post. Both racks were cooked for 3 1/2 hours at 275. The wrapped rack was wrapped in foil at 2 1/2 hours.

Which was the winner? 3 out of 4 voted in favor of the unwrapped ribs, my wife being the dissenting vote. I think the unwrapped could have been taken off at 3 hours although it's hard to argue with accolades plus both racks were tasty and moist.

My friend now wants to order a PBC, although I'm sure he can achieve the same results on his BGE.
