Finding myself bored with standard BBQ fare. First attempt at charcuterie. Brown sugar cure, injected and brined for 3 days. Looks good, hopefully not too salty. Got a packer brisket corning also. Getting my chops up to attempt capicola and salami in the fall

Super smokey turkey ham. I like it. Great for lunch meat

Looks great! That's my favorite way to do turkey. Tastes a lot like ham. The first one I did like that I only brined for 1 day. It needed longer. You did well to go three days.
