They are pulling back pretty good.Gonna start probing in about 30 mins.Will cooler them til dinner time.I put them on at 9:30 CST. it is now 3:00 CST. Ozark Oak lump with Hickory chunks.WSM therm says 250 but I have not confirmed that.I just let it go where it likes to run til whatever I am smoking is done to my liking.

Bones looking good, my WSM thermo is usually reads -30 from the grate temp, I know WSM thermo's are all over the place :crazy:

Pure horseradish and Cucacabra rub.
I also added more Worchestershire sauce and some Crystal hot sauce to the Zing Zang mix.Yes,I used Tito's vodka from TEXAS!

No plated pic,I just grazed,like usual.but they passed the YUMMEE,tastee,meat candy test.
