Just curious, Is there a reason you went with tenders instead of thighs? If its less prep work i can understand, but please dont say because tenders are lower in fat.

Because it is what I had in the fridge?

I normally use chicken breast (or tenders..same deal) instead of thighs because the bacon has a chance of being cooked before the thighs are done in my experience, at least at the temps I cook these at. (~350)
I wrap the bacon loose (which makes it cook quicker) if it is too tight it won't crisp.

If it was whats on hand then thats a good enough reason. But deboned skinless thighs made into strips and skewered dont take much time at all.

I'll have to try it using thighs.

If there are boneless thighs in this house, it is typically cause the wife is asking for stir fry.

On from the beginning.
We served it with a Honey/Dijon Mustard dipping sauce.

My personal experience is breast show a greater benefit/improvement from the flavor/grease from bacon than thighs do. Not to say bacon does not improve thighs just not as much as breast... Just my 2 cents... Plus breast are sooooo much healthier :wink:

Just maple syrup.
After I put them on skewers, I ran a line of syrup down the skewer and rolled the meat bundles to distribute.
