View Full Version : Left over Brisket Stuffed Peppers!

Hey guys, Decided to make something different tonight with my left over brisket I cooked the other day! Stuffed peppers it is! Mixed chopped brisket, triple Cheddar cheese (white,mild,sharp) rice, a small can of tomato sauce and sauteed onions. Stuffed the pepper put it in the oven at 350 for 45min-1hr covered in foil.


Took it out and uncovered them. Covered heavily with the cheese and back in the oven for 15-20 minutes.


Sorry no slice pictures. It was pretty good. I wish I put some SPOG in the rice mixture but I forgot to LOL.

Pretty good stuff!

Only thing I would of done differently was instead of topping it with cheese. I would of sliced the peppers open and covered the opening with cheese! These things were delicious! I ate two of them! The flavor from the brisket added a whole new flavor to stuffed peppers!

Thanks. I really enjoyed it. Will be on the list of things I make with left over brisket for now on! Now time for brisket left overs with breakfast!!

I pretty much just winged it with the stuffing mixture. I thought it was spot on perfect. What you can't see is the chunks of brisket. I originally was just going to use cream cheese, shredded cheese and brisket. The missus asked for me to use rice so I had to come up with something different.

I'm doing this one. THANKS!

You'll enjoy it! It was great. Only thing I would of done differently was after the peppers cooked, I would of tried slicing them open and adding cheese on top of the open slices. That might get messy tho.

Yeah cooked the rice first. I mixed triple cheddar cheese, rice, brisket, sauteed onions, and one of those small cans of tomato sauce. Mixed it together and stuffed the pepper. I wanted to put some SPOG in the mixture but I forgot. It didn't need it!
