Kinda nice, maybe 12 minutes or so between hitting the splits up with a torch to eating. BLT/Club sammies popped in my head so I picked up some peppered bacon from Fresh Thyme and made up some club sandwiches. Wow these hit the spot!

I love your cooker, and I got an idea on how to roll my own, so to speak, using the equipment I already have, with a couple slight mods. Gotta wait a couple weeks, taking my granddaughter home to Vegas on Sunday, and will be there a whole week. (We haven't had a real leave the area type vacation in over 8 years. I REALLY need it.)

Bacon on a grill? Who knew...

What was grate temp? Hmmm didn't check, I just did a normal fire. One thing you need to be careful of with bacon grease and fire. If it starts to get crazy slide in a pan to catch some grease and then pull the pan to crisp and cook fast.

It's probably hard for some to wrap their head around but If I couldn't replace it I would not trade it for anything...even a large fancy offset (unless I needed to cook large quantities) I wouldn't trade it for the fanciest of kamodoes, Charcoal weber summit, fanciest cabinet smoker...NOTHING because it just cooks that good, my other cookers largely stay in storage unless I'm traveling and i'll take one of my mini's.
