View Full Version : Laid back no fuss cook

Decided to cook up some short ribs and spares today. I went to a new meat market and picked up some short ribs. They were in the freezer and packed in butcher paper. When I took them out this morning I did not know they were individually cut. Oh well. Went with it.

Seasoned the shorts with SPOG and the spares I cut down to SLT and seasoned with my pork rub. Put them on the Boss Hogg at 250-300 with cherry splits.
Came out good. Just a laid back lazy cook.

Did not wrap this time, just did not want to be bothered. I do not know why I wrap anyway.

That's how my butcher cuts short ribs too. Going to have him do them different the next beefer I take in.

I actually prefer to cook ribs individually. I often cut my spares into individual ribs before smoking them. I like the idea of more surface area to gather in all the tasty goodness of the rub and smoke.

All looks great, especially like the all over bark on the shorties. What was the approximate cook time on the individual shorties? Approximate temp during the cook?

Cook time was about 5 1/2 hours. Temp was 250-300. I have always cooked them as a plate. Never individual before. I prefer uncut. Still came out good.

Ron, I've never cooked them uncut. Not the short ribs anyways. I'm not sure where to get them whole in Dallas area.

I would ask the butcher where you get them. Most get them uncut in 3 or 4 bone cryo packs and chop them up.
