Long day of prep, and another long day of smoking, but everything turned out well and the guests, and most importantly the bride, we're happy.

Wow...great job!! my daughters getting married this week...I'll do some smoking, but only for about 8-10 travelling guests

Some additional info that someone might find helpful/ interesting. I used all the available space on two 22" WSM's, brisket in one, pork in the other. I smoked 6 pork shoulder roasts (about 10 lbs each) for 6 1/2 to 7 hours at 275-300 degrees. I separated the briskets into flats and points, trimming the majority of the outside fat off. The brisket cooked for about 6 1/2 hours at 275-300. I took the smaller point meat off at about 5 hours and used one in the baked beans. Wrapped both meats about 4 hours in and swapped out top rack to bottom rack. Both meats rested for about an hour prior to slicing/ pulling. One bag of kingsford charcoal in each smoker, and apple and hickory chunks for smoke. Best smoke rings Ive gotten on the WSMs.

Funny how things seem to come full circle. Following up on my first thread started in Qtalk asking for advice with my daughters wedding. It is now 2 years later and I am preparing for my own wedding. I will be making a very similar menu for a similar number of people so I know what to do and NOT do this time around. I will have all the cold dishes done the day before and starting and finishing the meats early and having them resting in a cooler so someone else can carry the meal across the finish line.

Kudos..glad everything worked out so well. Grooms mother asked me one day to take pictures of the wedding..reminded her that I'm not a wedding photographer..she said she's seen some of my pictures and would really like it if I'd help her out (cheap..as in no money)..I relented..shot the wedding..sent film out for developing..gave mother the pictures..then listened to her bitch about composition, etc..swore never again grrrr. Oh ya..the mother of the groom?..my sister..lol. :rolleyes:

Here are some wedding photos for any interested. Was too bust to get many pics of the food. I smoked 3 briskets and 6 butts. Used the 26" kettle for the 3rd brisket. Turned out as good or better than the others. Thanks for looking.

The occasion was MY wedding. It was the second wedding we hosted in our backyard this summer. I have to say, as much time as the food prep was, the cooking was the easy part.
