View Full Version : Beef Short Ribs question

So I have some beef short ribs I will do this weekend and have no idea how long to smoke them. I normally do briskets for 1.25 hrs per pound. Is something similar good for the beef short ribs? I assume I pull when tender.

Cook them until probe tender, I smoke them at 275, I don't wrap and they take 6hrs give or take.

Smoking nake at 250F for the first 6 hours.
Then you start checking for donedess every 30-40 minutes till probe very tender.

These were smoked at 275-300. Did not wrap. Took about 6.5-7 hours.

Yep, a Beef Short Rib Plate like BigR's above will take 6 - 7 hours at 275*. Probe between each bone for tenderness. I only probed the middle the first time and two bones were tender, the third not so much, and the fourth was tough. Thirty mins wrapped in foil and it was great for lunch the next day.

Yep, 6-7.5 hrs. Although I did have one pesky rack that took almost 9 hours. I've noticed they almost always need to get above 200 to be tender. Toothpick test to make sure.

I typically cook between 300-325. I have found that they will take 6ish hours (give or take 30mins each way)

I treat it just like a brisket. 50/50 Kosher salt and butcher ground pepper. Smoke till I get the color I want, and then wrap till probe tender.

Last time I smoked my beef ribs, temp varied between 280-320 and smoked about 6.5 hours. And the bark was real chewy although very tender inside :( What would be a good way to soften the bark? Spray em often?

My last rib cook went 3 hrs on smoke then 90 min in wrap followed by a tented rest for about 30-45 min.

Ribs were crazy tender. You dont want them falling apart though, so dont over cook. Went with skewer test over temp.

Cooked in an insulated cabinet with a dry pan at 280 the whole time. Planned on 5 hrs for the cook and it was ample.
