View Full Version : Something a bit different...Ratatouille

I decided to make something for my mother-in-law and the other lady-folk that were invited to dinner, veggies, veggies and more veggies! The PBC did a fine job on this, holding 350 for 90 minutes. Egg plant, yellow zucchini, green zucchini, tomatoes, onion sliced thin. Add some salt, pepper, minced garlic, herb de Provence, olive oil, balsamic vinegar, topped with Parmesan and fresh basil before serving.

I also made sure my awesome father-in-law was taken care of with a 28oz porterhouse and some twice-baked potatoes that were golden brown on the 26er. Things were a bit tight with 2 big porterhouse and 8 NY Strips circling the vortex.

Sorry, limited pics as the wife grabbed these. I got a bit busy with the steaks. This turned out really well! Next time I will go slower in the prep to make the presentation a bit nicer.

I LOVE ratatouille. I make a grilled version every once in a while. Yours looks great!
