When we do pizzas, believe it or not, we have leftovers sometimes.

Well, here is a great idea for Saturday/Sunday morning breakfast. Cut it up into smallish pieces, put it in a pan to get nice and crispy. This time around, I also cut up the leftover mushrooms and added them to the party.

Once the pizza gets nice and crisp, pour in some beaten eggs.

Serve with a side of bacon, mimosas, and start your day right!

Wife and I are on vacation next week and we always have pizza left over. This will be breakfast or brunch. Thanks !

Don't scramble and put in a 400 degree oven till set and you have a frittata. Growing up with an Italian mother anything leftover could/did become a frittata. By the way Looks Great.

Gotta love this site. Someone is always thinking outside the box. Thinking about what you did, something just doesn't seem right about it....but it sure looks good. Gonna have to give it a try.

Standard screens from Restaurant Depot, they work really well.

Seriously??? That sounds like an excuse to eat more pizza! You should toss everything into a muffin tin and make pizza muffins!

Man, so now I actually have to NOT eat the last pieces of pizza at midnight and save them for breakfast!!!!!

I do that with leftover nachos! I should try it with pizza. That bacon looks fabulous too.

What I've been doing with leftover pizza is heating up two slices and using those as bread to hold my hamburger patties. :thumb:
