View Full Version : How do you slice brisket?

So today we went on a trip about a hour away to do some shopping, Stopped at the BBQ joint. Makes the 3rd time I've been there, First two times wasn't anything special. Good flavor a little on the dry side. I was hungry wanted BBQ so I gave them another try. It was pretty farkin good this time around. Seems like they are trying to change their flavor profile. Seems to be working.

Anyways, Each time I've went to this place and I find that they slice their brisket pretty thick. At least 3/4 inch thick. I know I normally slice less than 1/2 thick on my brisket. Their brisket pulls apart with 0 resistance. Almost like a hunk of pot roast. Just taste like brisket.

Do they cut theirs thick because it holds together better when it pulls apart real easy?

How thick are your brisket slices?

Yeah, Well when I go there I like to order their sampler platters because they give a leg quarter, 4 ribs, 1/4lb brisket and 1/4 pulled pork. Great for me because I like left overs!

Was just wondering why they slice their brisket like they do. Maybe its to hide its slightly overcooked? I don't feel its over cooked. It's really moist and more tender than some of the briskets I've cooked.

That would be my guess.

But if it tasted good, and you thought it was a good piece of meat, doesn't matter if it's overcooked or sliced too thick by comp standards, does it?.

about a 1/4" thick for me also .
