I have been cooking on my Assassin for about 9 months. This is my first attempt to cook a brisket on her. I have cook three briskets in the past on my 22 WSM. This was by far my best attempt at a brisket so far. Cooked with Royal Oak red bag briquettes with both oak and cherry wood chunks.

This was an Excel Choice 14 pound brisket purchased from Walmart for $2.59 per pound.
