Marinated in some hoisin, soy, mirin, garlic and chili flake. HB held about 250-275 for 3hrs on about a chimneys worth of lump, which was just right to get these probe tender.

Pretty tasty on their own but I ended up dicing 3 of them up for pasta carbonara :becky:
