I got an OKJoe Highland last year and am cooking a rack of BBs and a rack of St Louis spares tomorrow. I'll be burning apple and maple splits.
My question is whether it makes much difference if I I orient the racks parallel or perpendicular to the airflow.
Thoughts?

Don't make a difference, if I'm doin a rack or 2 I go long ways if I fill the pit I go front to back to utilize more rack space.

Only thing I would worry about is putting the spares between the firebox and the baby backs because the baby backs cook a little quicker. Other than that I don't have a preference.

BBQ Freak - no, don't have tuning plates, I have a cookie sheet baffle at the opening to the firebox . I may put a water pan on the grate at the FB end as well.
pjtexas1 - I plan to put the rack of spares in an hour before the BBs.
Without tuning plates. I would go thicker end of spare ribs towards fire box.
I go perpendicular. Just want the whole rack to cook in pretty much the same temp zone.

I agree with COS, go perpendicular to cook the rack more evenly.
