View Full Version : First real cook on the G2 Chubby w/pron

After last night and cooking the boneless skinless chicken, I figured I'd break this little cooker in right with two racks of ribs. Put these on about 3pm today. Cooking 265 for 2 hours then wrap. The smoker is cruising at 265 and not skipping a beat! I wish I could get this temp consistency out of my WSM. I don't even have the guru hooked up to the BES and it's just cruising.

I'll post more pics as I go. Next step is the wrapping

They looked a little dark to me. Wonder if that was from the Cherry wood? I know Cherry will give them a darker Mahogany look. Hmmm.

This is one of the ribs. When I got them in the light, the color was pretty good. I'm under a carport with the smoker so it's dark under there. These are the best ribs I've ever cooked! And had perfect bite through for competition. Now if I could just learn to cut them.
