Whats up boys. I'm Chris in Houston by way of Philadelphia. Grew up on the East Coast and moved to H-Town for work, Oil and Gas, about 4 years ago with my little lady and now we have the coolest 2 year old son. I've been lurking around the boards a month or so while my UDS was under construction. After years of envy of my pitmaster Uncle I finally have my first smoker.

First cook on mothers day - chicken thighs and 3 racks of spares on the 2nd grate with Ployboys Yardbird and Bovine Bold. Cooked @ 230 with KBB and apple wood chunks. Running a bbq guru digiq dx2 you can see attached to the 1.25" intake riser with radiator hose and band clamp, who needs the $40 universal adapter! Loaded up the fire basket with 3/4 bag of briqs with 4 chunks of apple wood and it ran solid @ 230 for 12 hours and could have gone 15 or so. Is the guru necessary with a UDS, nope, but it sure does make life easy :thumb:

No finished pics. You know the deal, everyone was starved and the food disappeared before I could even wash my hands and grab my phone, it was real good though! I've read most of the RoadMap and can't wait to mess around with hot and fast, peach paper, all the different techniques. Got a breakfast fatty lined up for Sunday morning.
