Back, you didn't know I was gone... (Pron)

So I've been sick, the entire house has. I guess it's bound to happen with two teachers and a toddler. Wind dropped to a lazy 15mph recently and the hail missed us so I decided to smoke on my UDS. I found about 6.5 lbs of Top Round and made some shredded beef. Due to illness I decided to keep it mild at best. Rubbed in salt, pepper, paprika and cumin. Smoked at 250 for about 5 hours. At the 3 hour mark I placed in tin pan and used some beef broth to bath them in. Turned out pretty good. We've made sammies, chimmis, and tacos.

Of course, silly me, I had a chimmichanga at the Iguana Cafe in Tucson, AZ when I was passing through on Amtrack a few years ago (I'm from Australia)!
