View Full Version : Mac and Cheese stuffed Fatty (PRON)

Cheesy throw down going on. Decided to make some cauliflower Mac and cheese. This Mac and cheese is super good but def not your normal flavors.
2 cups of roasted cauliflower
8oz curly noodle
7oz cheddar
2oz Parmesan
4oz Boursin garlic herb
2TBS olive oil
2TBS flour
1tsp Dijon mustard
1tsp salt
Cayenne pepper
2cups 1% milk

I found his recipe on the internet years ago. First roast the cauliflower until lightly browned. I cooked in on the yoder. Then cook your pasta according to box. Make a roux with the flour and oil and then pour in the milk. Stir until thickened turned off heat and added rest of ingredients. Combined with the noodles and cauliflower then bake for 45 mins at 375.

For the fatty I took the Mac and cheese before I baked it and put it in the fatty.

I then rolled it up and did a bacon weave. Seasoned with spicy Apple. Smoked on the Yoder for 1hr at 225 to get some smoke.

Then came the fun part! Got some oil hot and dropped this monster in there to get all nice and crispy.

Only fried for maybe 3 mins a side. Got the bacon nice and crispy.

Thanks! Yes I'm with you on that. Bacon has to be at least somewhat crispy and cooked through.

This would be a big hit in my house. I'm going to have to give it a try...

Thinking about passing on frying it, though, and maybe just trying a few minutes direct on each side to crisp the bacon.

Honestly i don't taste the actual cauliflower but it does add to the texture. My brother was eating some yesterday and asked what he was crunching on. I told him and he said he would of never known it was in there. I haven't made it though without to actually tell if it does give some type of backend flavor.
