I was wondering if anyone cooking pork butts ever cuts them in half before smoking to get more bark? We can call each half a cheek.:icon_blush:

My local butcher keeps them in his cooler that way sometimes. When I do a spur of the moment pork butt I pick them up that way. They come out pretty good and of course don't take as long to cook.

Works great when cooking for only two people and don't want leftovers.

Yes this gets more bark. Be careful--the difference in cooking time isn't nearly as much as you would expect (as in 2 4lb butts don't cook anywhere near twice as fast as an 8 pounder)
